First I melted 6 Tablespoons of unsalted butter.
Whisk in 7 Tablespoons of rice flour. When it begins to thicken, whisk in each item before adding the next:
1/3 cup half & half,
2/3 cup heavy whipping cream,
1/4 cup shredded Parmesan cheese,
3/4 cup shredded Mozzarella & Provolone mix.
Mix well, will kind of look like dough and act similar.
Bake at 450 degrees for 15 minutes.
It was quite good. The boy loved it how it was, but I think having a little more flavorful cheese in it next time might make it better.
Oh I love this, I should cook this more often, but I'm the only one in the family who loves cauliflower.

I grew up with something similar, using yellow sharp cheddar. YUM!

Yum! Looks like a great dinner. We don't buy cauliflower very often, and I don't know why, since we both like it. I'll have to keep this in mind next time I see it in the grocery store.
