I wanted to try
this recipe because the cream cheese sounded interesting. I can never get the cheese to melt as well as I want or it’s too tedious . . . so using cream cheese instead sounded interesting. Surprisingly, love it with cream cheese. It adds another dimension to the soup that is worth it.

I have since made another soup using cream cheese as the thickener and cream agent, a bacon and potato soup. Very yummy! I would suggest trying it if you haven’t.
Very interesting! I have never tried that, I will have to give it a go sometime. I love cream cheese in my mashed potatoes and such, I am sure it would be good in soups as well!
